High Protein Ambrosia Recipe with Libby Rainger

World Baking Day, the Betty Way - featuring Libby Rainger from The Wellness Platform

This World Baking Day, we’re skipping the oven and leaning into something creamy, nostalgic, and surprisingly good for you. Meet: Betty-style Ambrosia - a recipe created by Libby Rainger, coach, facilitator, and founder of The Wellness Platform.

Libby is a holistic coach and presenter with a passion for helping others live more intentionally. Her work focuses on mindset, habit building, and the mind-body connection - making her the perfect person to reimagine this Kiwi classic with a feel-good twist.

Her version of Ambrosia delivers on indulgence and nutrition. It’s creamy, chocolatey, and packed with functional ingredients that your body (and tastebuds) will love.

Betty Bar Ambrosia Recipe

Ingredients:

  • 1 cup of Greek or vanilla yoghurt(Use coconut yoghurt for dairy free)

  • ¼ cup frozen raspberries, crumbled, or ½ banana, chopped

  • A small handful of mini marshmallows

  • ½ a Choc Fudge Betty Bar, chopped

  • 1/4 cup chopped chocolate (like a Flake or Twix bar) or grated dark chocolate

  • Optional: Sprinkle of cinnamon

Method:

  1. Spoon your yoghurt of choice into a bowl as your creamy base.

  2. Add in the fruit—either crumbled frozen raspberries or small banana pieces.

  3. Toss in the marshmallows for that soft, gooey sweetness.

  4. Crumble in half a Betty Bar—use your hands or a knife to break it into small chunks.

  5. Mix it all together gently until combined.

  6. Top with a sprinkle of chocolate and a pinch of cinnamon.

Serve immediately for a chilled, creamy, crunchy-sweet bowl of bliss.
